The wine is a classic coonawarra cabernet showing intense cassis fruit flavours, with a long finish on the palate and soft tannins. The wine was matured in a combination of french and american oak, adding to the wines structure, but not dominating the pure coonawarra fruit characters. the fruit for the cabernet sauvignon is selected from old vine material from the wilgha and neilsons block vineyards. Located on the famous terra rossa soil, these vineyards were originally planted by ian and wendy hollick in the 1970s and early 1980s. it will effortlessly cellar for at least 10 years, and is the ideal accompaniment to lamb dishes. |
