This wine is created using only 100% estate grown grapes from the family's 'Nindethana' vineyards. We harvested just after dawn to ensure the grapes were picked and crushed at the optimum temperature. After fermentation in open fermenters and run off at 3.5 deg. Beaume the skins were pressed in a basket press. The full flavoured pressings were then 'remarried' with the free run and transferred to French and American oak hogs heads for 12 months maturation. This wine exhibits intense lifted Cabernet berry fruit on the nose, with spicy, sweet ueat soft undertones of oak. The palate is long, complex, mouth filling and supple, with a cleansing, crisp acid, which holds onto the finish. This wine has undergone minimal filtration and will throw a harmless deposit in the bottle. Should this be a problem, decant the wine before serving. |
