Made from Shiraz grapes grown on the Dennis Family Vineyards at McLaren Flat, South Australia. The fermenting juice was run off the skins at approx. 3.5 beaume. The skins were presed in a traditional basket press and 100% of the pressings were returned to the main body of the wine. The wine was aged for 12 months in French and American oak hogsheads and Barriques. The resultant wine is rich, flavoursome and soft and will be enhanced with 2 to 3 years bottle maturation. It will go very well with roast beef or grilled steak and is especially good with full flavoured cheeses. This wine has undergone minimal filtration and will throw a harmless deposit in the bottle. Should this be a problem, decant the wine before serving. |
